Ingredients
- Catfish fillets (4, about 6 oz each)
- Bayou Spice Blend (2 tablespoons)
- Butter (2 tablespoons)
- Lemon or lime (1, cut into wedges)
- Green onions (2, chopped for garnish)
- Fresh cilantro (optional, for garnish)
- Salt and black pepper to taste
Instructions
- Pat catfish fillets dry. Season both sides with salt and pepper.
- Coat both sides generously with Bayou Spice Blend.
- Heat a cast iron skillet over medium-high heat until very hot.
- Add butter, then carefully add two catfish fillets.
- Cook 3-4 minutes per side until blackened and cooked through.
- Repeat with remaining fillets.
- Serve with lemon wedges, green onions, and cilantro. Pair with rice or roasted vegetables.
