Bison Chili with Cornbread

A hearty, warming bison chili with deep spice and richness, topped with sour cream and cheddar, paired with fresh cornbread.

Ingredients
- 2 lbs Ground Bison
- 2 tbsp olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp smoked paprika
- 2 cans crushed tomatoes
- 1 can kidney beans, drained
- 1 can black beans, drained
- 2 cups beef broth
- Salt and pepper to taste
- Sour cream, cheddar, and green onions for serving
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onion and cook 4-5 minutes.
- Add garlic and cook 1 minute.
- Add Ground Bison and cook until browned, 8-10 minutes.
- Stir in chili powder, cumin, and smoked paprika for 1-2 minutes.
- Add tomatoes, beans, and broth.
- Bring to a boil, then simmer 25-30 minutes.
- Season with salt and pepper.
- Serve topped with sour cream, cheddar, and green onions alongside cornbread.
