Bison Chili with Cornbread

A hearty, warming bison chili with deep spice and richness, topped with sour cream and cheddar, paired with fresh cornbread.

Ingredients

  • 2 lbs Ground Bison
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 2 cans crushed tomatoes
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 2 cups beef broth
  • Salt and pepper to taste
  • Sour cream, cheddar, and green onions for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onion and cook 4-5 minutes.
  3. Add garlic and cook 1 minute.
  4. Add Ground Bison and cook until browned, 8-10 minutes.
  5. Stir in chili powder, cumin, and smoked paprika for 1-2 minutes.
  6. Add tomatoes, beans, and broth.
  7. Bring to a boil, then simmer 25-30 minutes.
  8. Season with salt and pepper.
  9. Serve topped with sour cream, cheddar, and green onions alongside cornbread.
