Creamy Cashew Butter Thai Noodle Sauce

Silky Thai-inspired noodle sauce made with creamy cashew butter, lime juice, and a touch of heat.

Ingredients

  • 1 pound rice noodles or wheat noodles
  • 1/4 cup Cashew Butter
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon agave or honey
  • 1 teaspoon sriracha or red curry paste
  • 1/4 cup warm vegetable broth
  • Cilantro, sliced red chili, and crushed peanuts for garnish

Instructions

  1. Cook noodles according to package directions, then drain and set aside.
  2. In a small saucepan, whisk together Cashew Butter, soy sauce, lime juice, agave, and sriracha.
  3. Slowly add warm vegetable broth while whisking until you achieve a smooth, pourable sauce consistency.
  4. Heat gently over low heat for 2-3 minutes, stirring occasionally, until the sauce is warm and well combined.
  5. Toss cooked noodles with the cashew butter sauce until evenly coated.
  6. Divide into bowls and top with fresh cilantro, sliced red chili, and crushed peanuts.
  7. Serve hot with lime wedges on the side and extra sauce for drizzling.
