Cinnamon Honey Butter Sweet Potatoes

Creamy roasted sweet potato halves brushed with cinnamon-infused honey and topped with toasted pecans, a side dish with dessert-like appeal.

Ingredients

  • 4 medium sweet potatoes
  • 3 tbsp butter
  • 4 tbsp Cinnamon Infused Honey
  • 1/4 tsp sea salt
  • 1/2 tsp vanilla extract
  • 1/2 cup pecan pieces, toasted
  • 2 tbsp maple syrup
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 400°F and line a baking sheet with foil.
  2. Scrub sweet potatoes and prick with a fork.
  3. Roast for 35-40 minutes until tender.
  4. Cut each potato in half lengthwise.
  5. Scoop out some flesh to create a well.
  6. Melt butter and whisk in Cinnamon Infused Honey, vanilla, salt, and nutmeg.
  7. Brush honey butter mixture over each potato half.
  8. Top with toasted pecans.
  9. Drizzle with maple syrup and serve warm.
