Cinnamon Honey Butter Sweet Potatoes

Ingredients
- 4 medium sweet potatoes
- 3 tbsp butter
- 4 tbsp Cinnamon Infused Honey
- 1/4 tsp sea salt
- 1/2 tsp vanilla extract
- 1/2 cup pecan pieces, toasted
- 2 tbsp maple syrup
- Pinch of nutmeg
Instructions
- Preheat oven to 400°F and line a baking sheet with foil.
- Scrub sweet potatoes and prick with a fork.
- Roast for 35-40 minutes until tender.
- Cut each potato in half lengthwise.
- Scoop out some flesh to create a well.
- Melt butter and whisk in Cinnamon Infused Honey, vanilla, salt, and nutmeg.
- Brush honey butter mixture over each potato half.
- Top with toasted pecans.
- Drizzle with maple syrup and serve warm.
