Classic Vanilla Bean Crème Brûlée

Silky custard infused with premium vanilla bean, finished with a crispy caramelized sugar shell for the perfect contrast.

Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 Premium Vanilla Cut piece (about 2-3 inches)
  • 5 egg yolks
  • 1/4 cup white sugar, plus extra for topping
  • Pinch of sea salt

Instructions

  1. Split the vanilla bean and scrape seeds into heavy cream and milk, then add the pod itself and heat until steaming (do not boil). Remove from heat and let steep for 15 minutes.
  2. Whisk egg yolks with sugar until pale and thick, about 3 minutes.
  3. Slowly pour the warm vanilla cream into the egg mixture while whisking constantly to temper the eggs.
  4. Strain the mixture through a fine sieve to remove vanilla solids and any bits of cooked egg.
  5. Pour custard into ramekins and place in a water bath (hot water should come halfway up the sides).
  6. Bake at 325°F for 30-35 minutes until the custard is set but slightly jiggly in the center.
  7. Chill for at least 4 hours. Before serving, sprinkle with sugar and torch until golden and crispy.
