Coconut Brown Basmati Rice Bowl

A nourishing vegetarian grain bowl with coconut-infused brown basmati rice, roasted vegetables, and crispy chickpeas with a tahini drizzle.

Ingredients

  • 1 1/2 cups Brown Basmati Rice
  • 1 can coconut milk
  • 1 1/2 cups vegetable broth
  • 1 tsp turmeric
  • Salt to taste
  • 2 cups mixed roasted vegetables
  • 1 can chickpeas, drained
  • 1 avocado, sliced
  • 2 cups fresh spinach
  • 3 tbsp tahini
  • 2 tbsp lime juice
  • Cilantro and pumpkin seeds for garnish

Instructions

  1. Rinse rice under cold water.
  2. Combine rice, coconut milk, broth, turmeric, and salt.
  3. Bring to a boil, simmer covered 25-30 minutes.
  4. Roast vegetables at 425°F for 25 minutes, crisp chickpeas for 20-25 minutes.
  5. Whisk tahini and lime juice with warm water for drizzle.
  6. Fluff rice and divide among bowls.
  7. Top with roasted vegetables, chickpeas, spinach, and avocado.
  8. Drizzle with tahini sauce and garnish.
