A nourishing vegetarian grain bowl with coconut-infused brown basmati rice, roasted vegetables, and crispy chickpeas with a tahini drizzle.

Ingredients
- 1 1/2 cups Brown Basmati Rice
- 1 can coconut milk
- 1 1/2 cups vegetable broth
- 1 tsp turmeric
- Salt to taste
- 2 cups mixed roasted vegetables
- 1 can chickpeas, drained
- 1 avocado, sliced
- 2 cups fresh spinach
- 3 tbsp tahini
- 2 tbsp lime juice
- Cilantro and pumpkin seeds for garnish
Instructions
- Rinse rice under cold water.
- Combine rice, coconut milk, broth, turmeric, and salt.
- Bring to a boil, simmer covered 25-30 minutes.
- Roast vegetables at 425°F for 25 minutes, crisp chickpeas for 20-25 minutes.
- Whisk tahini and lime juice with warm water for drizzle.
- Fluff rice and divide among bowls.
- Top with roasted vegetables, chickpeas, spinach, and avocado.
- Drizzle with tahini sauce and garnish.
