English Breakfast Tea Smoked Salmon Brunch

An elegant brunch featuring English Breakfast Tea-brined smoked salmon, paired with fresh bagels and traditional accompaniments.

Ingredients

  • 4 Beach House English Breakfast Tea bags
  • 2 cups water
  • 1/4 cup brown sugar
  • 2 tbsp sea salt
  • 1 lb salmon fillet, skin removed
  • 6 bagels, halved and toasted
  • 8 oz cream cheese, softened
  • 1 red onion, thinly sliced
  • 1 cup capers
  • 2 cups mixed greens
  • Dill and lemon for garnish

Instructions

  1. Steep 4 tea bags in 2 cups boiling water for 5 minutes.
  2. Combine brewed tea, brown sugar, and sea salt.
  3. Add salmon to brine; refrigerate 4 hours or overnight.
  4. Remove salmon and bake at 350°F for 12-15 minutes.
  5. Allow salmon to cool and break into flakes.
  6. Toast bagel halves and spread with cream cheese.
  7. Layer with salmon, red onion, capers, and greens.
  8. Garnish with fresh dill and lemon.
  9. Serve with hot English Breakfast Tea.
