Honey Glazed Carrots with Thyme

Tender roasted carrots caramelized in a glossy glaze made from raw Alabama honey and fresh thyme.

Ingredients
- 2 lbs rainbow carrots, halved lengthwise
- 3 tbsp olive oil
- 3 tbsp Raw Honey from Downtown, Alabama
- 2 tbsp butter
- 4 sprigs fresh thyme
- 2 cloves garlic, smashed
- Salt and black pepper to taste
- Lemon juice to taste
Instructions
- Preheat oven to 425°F.
- Toss carrots with olive oil, salt, and pepper on a baking sheet.
- Roast for 15 minutes, stirring halfway.
- Melt butter over low heat and stir in honey, thyme, and garlic.
- Warm the honey mixture for 1-2 minutes.
- Let infuse for 5 minutes.
- Drizzle carrots with warm honey mixture, toss to coat.
- Roast for another 10-15 minutes until tender and golden.
- Finish with a squeeze of fresh lemon juice.
