Honey Glazed Carrots with Thyme

Tender roasted carrots caramelized in a glossy glaze made from raw Alabama honey and fresh thyme.

Ingredients

  • 2 lbs rainbow carrots, halved lengthwise
  • 3 tbsp olive oil
  • 3 tbsp Raw Honey from Downtown, Alabama
  • 2 tbsp butter
  • 4 sprigs fresh thyme
  • 2 cloves garlic, smashed
  • Salt and black pepper to taste
  • Lemon juice to taste

Instructions

  1. Preheat oven to 425°F.
  2. Toss carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 15 minutes, stirring halfway.
  4. Melt butter over low heat and stir in honey, thyme, and garlic.
  5. Warm the honey mixture for 1-2 minutes.
  6. Let infuse for 5 minutes.
  7. Drizzle carrots with warm honey mixture, toss to coat.
  8. Roast for another 10-15 minutes until tender and golden.
  9. Finish with a squeeze of fresh lemon juice.
