A tender, moist olive oil cake infused with fresh citrus and topped with a silky glaze using Fat Gold Standard Olive Oil.

Ingredients
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 3/4 cup Fat Gold Standard Olive Oil
- 3/4 cup sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- Zest of 2 lemons
- 1/2 cup Greek yogurt
- Glaze: 1 cup powdered sugar, 2 tablespoons lemon juice, 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F, grease 9-inch cake pan.
- Whisk flour, baking powder, salt.
- Whisk olive oil and sugar until combined.
- Add eggs one at a time.
- Alternate adding flour and yogurt.
- Fold in lemon juice and zest.
- Bake 32-35 minutes. Cool, glaze, and serve.
