Olive Oil Cake with Citrus Glaze

A tender, moist olive oil cake infused with fresh citrus and topped with a silky glaze using Fat Gold Standard Olive Oil.

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 3/4 cup Fat Gold Standard Olive Oil
  • 3/4 cup sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1/2 cup Greek yogurt
  • Glaze: 1 cup powdered sugar, 2 tablespoons lemon juice, 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F, grease 9-inch cake pan.
  2. Whisk flour, baking powder, salt.
  3. Whisk olive oil and sugar until combined.
  4. Add eggs one at a time.
  5. Alternate adding flour and yogurt.
  6. Fold in lemon juice and zest.
  7. Bake 32-35 minutes. Cool, glaze, and serve.
