Creamy Sour Cream & Onion Dip with Artisan Chips

A cool, tangy sour cream dip loaded with caramelized onions, fresh herbs, and a hint of garlic — the perfect partner for Rosie's crispy artisan chips.

Ingredients
- 1 bag Rosie's Chips
- 1 cup sour cream
- 1/2 cup mayonnaise
- 2 large sweet onions, thinly sliced
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons fresh chives, finely chopped
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- Salt and freshly cracked black pepper to taste
- Fresh dill for garnish
Instructions
- Melt butter in a skillet over medium-low heat. Add sliced onions and cook slowly for 12-15 minutes, stirring occasionally, until deeply golden and caramelized. Add minced garlic in the last minute of cooking.
- Remove from heat and let the caramelized onions cool completely.
- In a medium bowl, combine sour cream, mayonnaise, onion powder, and garlic powder. Stir until smooth.
- Fold in the cooled caramelized onions and chopped chives. Season with salt and freshly cracked black pepper to taste.
- Cover and refrigerate for at least 30 minutes to let the flavors meld together.
- Transfer dip to a serving bowl, garnish with fresh dill, and serve alongside a generous pile of Rosie's Chips.
