Tuscan White Bean Bruschetta with EVOO Drizzle

Rustic bruschetta topped with creamy white beans, fresh herbs, and ripe tomatoes, finished with Les Cousines EVOO.

Ingredients

  • 1 Italian baguette, sliced
  • 1 can white beans
  • 3 ripe tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tablespoons Les Cousines EVOO
  • 2 tablespoons fresh basil
  • 1 tablespoon fresh parsley
  • 1 tablespoon balsamic vinegar
  • Sea salt and pepper

Instructions

  1. Preheat oven to 400°F.
  2. Brush baguette slices with EVOO, toast 6-8 minutes.
  3. Rub lightly with fresh garlic if desired.
  4. Combine white beans, tomatoes, garlic, EVOO, basil, parsley, balsamic.
  5. Season with salt and pepper.
  6. Spoon generously onto each crostini.
  7. Drizzle with additional EVOO and serve.
