Vegetable Biryani Dinner with Cucumber Raita

A fragrant, aromatic one-pot Indian meal made easy with Kay's Curries' Vegetable Biryani. Served alongside cooling cucumber raita for a complete dinner.

Ingredients

  • Vegetable Biryani by Kay's Curries (1 package)
  • Water (as directed on package)
  • Butter or ghee (1 tablespoon)
  • Fresh cilantro (2 tablespoons, chopped)
  • Greek yogurt (1 cup)
  • Cucumber (1, finely diced)
  • Mint leaves (2 tablespoons, finely chopped)
  • Salt and black pepper to taste

Instructions

  1. Prepare raita: Combine Greek yogurt with diced cucumber and fresh mint. Season and refrigerate.
  2. Follow package directions for Kay's Curries Vegetable Biryani.
  3. Once cooked, gently fluff with a fork to separate grains and vegetables.
  4. Transfer to serving platter or bowls. Garnish with fresh cilantro.
  5. Serve warm biryani alongside chilled cucumber raita.
  6. Optional: Serve with naan or roti on the side.
  7. For extra richness, drizzle with ghee and serve with lime wedges.
