West African Jollof Rice

Aromatic, vibrant red Jollof rice that gets its signature color and depth from certified organic red palm oil, a true West African classic.

Ingredients
- 3 tbsp Red Palm Oil, Certified Organic
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 large tomatoes, diced
- 2 tbsp tomato paste
- 2 cups long-grain white rice
- 3 1/2 cups chicken or vegetable broth
- 1 tsp thyme
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat red palm oil in a large pot over medium heat.
- Add diced onion and cook until softened, about 3-4 minutes.
- Stir in garlic and cook for another minute.
- Add tomatoes and tomato paste, cooking for 5 minutes.
- Stir in rice and coat well with the oil and tomato mixture.
- Pour in broth, thyme, and bay leaves, then bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
- Remove bay leaves, season, fluff with a fork, and garnish with fresh parsley.
