West African Jollof Rice

Aromatic, vibrant red Jollof rice that gets its signature color and depth from certified organic red palm oil, a true West African classic.

Ingredients

  • 3 tbsp Red Palm Oil, Certified Organic
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 large tomatoes, diced
  • 2 tbsp tomato paste
  • 2 cups long-grain white rice
  • 3 1/2 cups chicken or vegetable broth
  • 1 tsp thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat red palm oil in a large pot over medium heat.
  2. Add diced onion and cook until softened, about 3-4 minutes.
  3. Stir in garlic and cook for another minute.
  4. Add tomatoes and tomato paste, cooking for 5 minutes.
  5. Stir in rice and coat well with the oil and tomato mixture.
  6. Pour in broth, thyme, and bay leaves, then bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
  8. Remove bay leaves, season, fluff with a fork, and garnish with fresh parsley.
