Philosopher Foods started on Earth Day 2013, when founder Tim Richards experimented with sprouted almonds in a cooperative house in Davis, California and ended up with the best almond butter he and his housemates had tasted. The company now works out of a small facility in Santa Rosa, California, where it stone-grinds sprouted almond butter and makes its Gut Nuts line in small batches.

The almond butters are deliberately short on ingredients. The Naked Creamy and Naked Crunchy are made from just two things, Regenerative Organic Certified nonpareil almonds and a little ancient seabed salt, while the Creamy Alchemy version adds coconut oil and vanilla. Sprouting the almonds before a long stone-grind gives the butter a naturally sweet, pourable texture without added sugar or oil.

Gut Nuts came out of a happy accident: while sprouting a batch of almonds, Richards noticed them fermenting with a sourdough aroma. The brand now ferments organic almonds, cashews, and peanuts into crunchy, tangy, umami snacks that it bills as the world's first fermented nuts.
