Biltong & Avocado Power Bowl

Ingredients

  • 6 oz Original Grass Fed Beef Biltong
  • 4 cups mixed greens
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, sliced
  • 1/4 cup pumpkin seeds
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar

Instructions

  1. Divide mixed greens between two bowls.
  2. Arrange avocado, tomatoes, cucumber, and red onion.
  3. Top with pumpkin seeds.
  4. Place sliced Biltong on top.
  5. Whisk olive oil, balsamic, salt, and pepper.
  6. Drizzle vinaigrette over bowls.
  7. Toss gently or serve dressing on side.
