Farmer's Cheese Blintzes with Sour Cream & Jam

Delicate crepes filled with creamy Smith's Country Cheese in the classic Eastern European style. Served with sour cream and jam.

Ingredients
- All-purpose flour (1 cup)
- Eggs (2)
- Whole milk (1 cup)
- Salt (1/4 teaspoon)
- Butter (2 tablespoons, melted plus more for cooking)
- Traditional Fresh Farmer's Cheese (1.5 cups)
- Sour cream (1/2 cup for serving)
- Jam or fruit preserves (for serving)
Instructions
- Blend flour, eggs, milk, salt, and butter until smooth. Rest 15 minutes.
- Cook thin crepes in buttered skillet, 1 minute per side.
- Mix Farmer's Cheese with 1 tbsp sugar and vanilla extract.
- Spoon 2 tbsp filling into each crepe center, fold into triangles.
- Cook filled blintzes 2-3 minutes per side until golden.
- Top with sour cream and jam.
- Serve warm.
