Creamy Lobster Mushroom Risotto

A luxurious risotto starring rehydrated Dried Lobster Mushrooms for a restaurant-quality dish.

Ingredients
- 1 oz Dried Lobster Mushrooms
- 4 cups broth, kept warm
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 tablespoons butter
- 1/2 cup Parmigiano-Reggiano, grated
- Salt, pepper, fresh parsley
Instructions
- Rehydrate mushrooms in warm broth 10 minutes; chop and reserve liquid.
- Sauté onion and garlic in butter until soft.
- Add Arborio rice, stir 2 minutes.
- Deglaze with white wine.
- Add broth one ladle at a time, stirring frequently, 18-20 minutes.
- Fold in mushrooms and soaking liquid during last 5 minutes.
- Finish with butter and Parmigiano; garnish with parsley.
