Creamy Lobster Mushroom Risotto

A luxurious risotto starring rehydrated Dried Lobster Mushrooms for a restaurant-quality dish.

Ingredients

  • 1 oz Dried Lobster Mushrooms
  • 4 cups broth, kept warm
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 1/2 cup Parmigiano-Reggiano, grated
  • Salt, pepper, fresh parsley

Instructions

  1. Rehydrate mushrooms in warm broth 10 minutes; chop and reserve liquid.
  2. Sauté onion and garlic in butter until soft.
  3. Add Arborio rice, stir 2 minutes.
  4. Deglaze with white wine.
  5. Add broth one ladle at a time, stirring frequently, 18-20 minutes.
  6. Fold in mushrooms and soaking liquid during last 5 minutes.
  7. Finish with butter and Parmigiano; garnish with parsley.
