Red Wine Sausage & White Bean Cassoulet

A rustic French-inspired cassoulet featuring Vermont Salumi's red wine and garlic sausage combined with creamy white beans and aromatics.

Ingredients

  • Red Wine & Garlic Sausage (2 links, sliced)
  • Canned white beans (2 cans, drained)
  • Yellow onion (1, diced)
  • Carrots (2, sliced)
  • Garlic cloves (3, minced)
  • Chicken broth (1.5 cups)
  • Fresh thyme and bay leaf
  • Salt and pepper to taste

Instructions

  1. Brown sausage slices 3-4 minutes. Remove and set aside.
  2. Sauté onion and carrot 5 minutes. Add garlic 1 minute.
  3. Return sausage, add beans, broth, thyme, and bay leaf.
  4. Simmer covered 30-35 minutes.
  5. Season with salt and pepper. Remove thyme and bay leaf.
  6. Serve hot with crusty bread.
