Red Wine Sausage & White Bean Cassoulet

A rustic French-inspired cassoulet featuring Vermont Salumi's red wine and garlic sausage combined with creamy white beans and aromatics.

Ingredients
- Red Wine & Garlic Sausage (2 links, sliced)
- Canned white beans (2 cans, drained)
- Yellow onion (1, diced)
- Carrots (2, sliced)
- Garlic cloves (3, minced)
- Chicken broth (1.5 cups)
- Fresh thyme and bay leaf
- Salt and pepper to taste
Instructions
- Brown sausage slices 3-4 minutes. Remove and set aside.
- Sauté onion and carrot 5 minutes. Add garlic 1 minute.
- Return sausage, add beans, broth, thyme, and bay leaf.
- Simmer covered 30-35 minutes.
- Season with salt and pepper. Remove thyme and bay leaf.
- Serve hot with crusty bread.
