How to grow

Sow directly once soil reaches about 70°F, or start indoors 3 to 4 weeks before the last frost, planting 1 inch deep in deep mounds of organic-rich soil. Provide full sun and about an inch of water per week, keeping soil moist but not waterlogged. Allow at least 18 inches between plants for vine growth. Harvest when the skin hardens, leaving 2 to 3 inches of stem, then cure in the sun about ten days before storing cool and dry.

Flavor profile

The cured flesh is sweet and nutty with a smooth, fine grain that roasts and purees beautifully for soups and pies.
