Sow 1 inch deep in full sun once soil reaches 65 to 85°F, thinning plants to 2 to 3 inches apart. The bush plants stay 15 to 18 inches tall and need no trellising. Let the pods dry on the plant, then shell the mature beans for storage. Harvest over 90 to 100 days for a full crop of dry shell beans.

Flavor profile

Cannellini beans are smooth, rich, and nutty with a starchy, potato-like texture that holds its shape in soups, salads, and slow-cooked dishes.
