Mapache Coffee, led by fifth-generation producers Jan-Carlo and Sofia Handtke, operates in El Salvador's Apaneca Ilamatepec mountain range. Employing over 125 locals year-round and expanding to 600 during harvest, Mapache focuses on sustainable practices, from nurturing coffee nurseries to processing perfectly ripe cherries.

With a strong commitment to environmental stewardship, Mapache preserves coffee forest canopies and uses a modern wet mill that conserves and recycles water. Pulp from milling is composted to enrich the soil, ensuring sustainability at their six farms.

The Strictly High Grown coffees hail from Finca El Naranjito and Casa de Zinc in Concepción de Ataco, at 1,300 meters above sea level near El Imposible National Park. These estates produce exceptional Bourbon and Pacas varieties, delivering consistency and care in every cup.

Flavor Notes: Apple • Grape • Almond • Brown Sugar

Processing: Washed Process

Varietal: Bourbon & Pacas

Roast: Light-Medium Roast

Additional Information:

Processing: Washed coffee processing is similar to natural processing, but organic matter is stripped off of the coffee bean within days of the coffee cherry being plucked from the tree and then washed with water before they are dried. This removes any impurities and gives the coffee a cleaner taste.
