How to use
Place a drop of honey on the prism and close the cover to spread it thin. Hold the refractometer to a bright light and read where the two colors meet on the scale, then wipe the prism clean. Harvest only when moisture is below 18%, since honey at or above 18% may ferment. Calibrate with the included fluid (or extra virgin olive oil) until it reads 72% solids / 28% water, using fluid at the same temperature as your sample.
