Preparation

Thaw in the refrigerator overnight, pat dry, and sear in a screaming hot pan with neutral oil and butter, about 90 seconds per side, for a deep golden crust. Serve over risotto, cauliflower puree, or brown butter and capers. For raw service, slice thinly and dress with yuzu, olive oil, or ponzu. Avoid overcooking to keep the natural sweetness.
