Italian Parsley (Petroselinum neapolitanum), also called flat-leaf parsley, is a glossy, flat-leaved biennial with a stronger flavor than curly types. Called for in many gourmet recipes, its tender, aromatic dark green leaves suit garnishes, soups, sauces, and marinades. Rich in vitamins A, C, several Bs, calcium, and iron. Organic.

How to grow

Sow 1/4" deep at 65-85 F; seeds can take up to 3 weeks to germinate, and soaking in warm water for 24 hours first can speed it. Keep soil consistently moist, grow in full sun to partial shade in rich, well-drained soil, and thin to 6" apart. Harvest outer leaves regularly with clean shears to encourage new growth. Flavor turns bitter once the plant bolts.
