Parisian Carrot is an organic, non-GMO heirloom carrot (Daucus carota) that grows small, round, golf-ball-sized roots with sweet, tender flesh. A biennial usually grown as an annual, it is forgiving of compacted or shallow soil because the round roots do not need to grow deep, making it a strong choice for gardeners who have struggled with long carrots. Each packet holds about 500 seeds.

How to grow

Direct seed 2 to 3 weeks before the last frost, sowing 1/4 to 1/2 inch deep in light, well-draining soil with a pH of 6.0 to 6.6. Seeds germinate fastest near 75°F and will sprout in soil as cool as 45°F, just more slowly. Mix the fine seed with sand or dry coffee grounds for even spacing, then thin to 2 to 3 inches. Keep moisture even to prevent cracking. Roots mature in 50 to 68 days. Trim the tops to extend storage.

Flavor profile

Parisian carrots are sweet and crisp with tender flesh, delicious raw, lightly steamed, or roasted. Their round, uniform shape also makes an appealing garnish.
