Russian Mammoth Sunflower is an organically grown, open-pollinated annual (Helianthus annuus) that towers 10 to 15 feet tall with a single giant golden bloom. Returned to the US under the name Russian Mammoth in 1880, this heirloom giant produces large heads of white and grey striped edible seeds surrounded by gold petals.

How to grow
Sow seeds 1/2 inch deep in full sun in spring after frost, in moderately fertile, well-drained soil. Seeds germinate in 7 to 14 days. Give plants moderate water and, in exposed sites, support the tall stalks. Blooms appear late summer into fall; leave heads to dry on the plant to harvest mature seeds.
Flavor profile
The striped seeds are mild and nutty with a satisfying crunch, good roasted and salted for snacking or added to baking. Birds enjoy them straight from the dried head.
