San Marzano is an organic heirloom paste tomato (Lycopersicon lycopersicum) famous for its dense, meaty flesh and low seed count. The standard Italian pear tomato, also called the Italian Canner, produces elongated fruit about 4 inches long and 2 inches across, borne in clusters on large indeterminate vines. It holds well on the vine or in storage, is crack resistant, and is a processor favorite for its high solids.

How to grow

Sow seeds 1/2 inch deep in warm soil around 70 to 85°F; germination takes 6 to 12 days. Transplant into full sun and nutrient-rich, well-draining soil, spacing plants 15 to 36 inches apart. These vigorous indeterminate vines need staking or caging and will set fruit continuously through the season.

Flavor profile

Rich, sweet, and low in acidity with thick, meaty flesh and few seeds. The concentrated flavor cooks down into a smooth, full-bodied sauce, which is why San Marzano is prized in Italian kitchens.
