Spaghetti is an organic heirloom winter squash (Cucurbita pepo) whose mildly sweet, stringy flesh forks out into spaghetti-like strands when cooked. The oblong, golden-yellow fruit weighs 2 to 4 pounds and grows on vigorous vining plants. Bake or boil it, fork out the strands, and top with a favorite sauce for a low-carb pasta alternative.

How to grow

Sow seeds 1/2 to 1 inch deep in warm soil around 75 to 95°F; germination takes 8 to 10 days. Grow in full sun, giving the vines room to run, and thin to about 12 inches apart. Harvest at full maturity (about 90 days) when the rind is hard, and cure for storage in a warm, dry spot.
