How to grow

Direct sow 1/2 inch deep in well-drained soil rich in organic matter, with a pH of 6.0 to 7.0; avoid excess nitrogen so roots develop well. Cool weather gives the best results. Germination takes 4 to 12 days; thin to 4 to 6 inches. Harvest young, under about 1 inch across, for the best texture.

Flavor profile

Crisp, sweet, and juicy with a snappy, peppery bite. Best eaten young and fresh, when the white flesh is most tender.
