How to grow
Direct sow 1 inch deep in warm soil after the last frost, planting in hills with room for the vines to spread. Grow in full sun in rich, well-drained soil and water deeply. Harvest when the rind turns golden and hard, then cure for storage. Cook whole or halved, then scrape the flesh into strands with a fork.
Flavor profile
Mild and slightly nutty; the strands are firm and take on the flavors of whatever they are served with.
