German Winter Thyme (Thymus vulgaris) is a short, compact, aromatic hardy perennial with tiny lavender flowers. Its fragrant leaves season sauces, soups, and stews and pair well with poultry and fish, and the plant is known to deter cabbage worms.

How to grow

Start seeds indoors 6 to 8 weeks before the last frost, or sow directly 2 to 3 weeks before the last frost, planting just 1/16 inch deep with germination in 21 to 28 days. Thyme grows in most soils but performs best in well-drained soil with moderate nutrients, since overly rich soil makes plants leggy. Lightly pinch developing plants for bushiness and harvest leaves once plants are established. Use fresh, or dry or freeze for storage.
