Tokyo Negi (Long Green Onion) from Suzuki Farm is a thick-stemmed Welsh onion with a long white shank, sold by the bunch. It carries far more dense white stem than the green onions common in America, sweetening beautifully when cooked.
At a glance
- Variety: Tokyo Negi (Welsh onion / long green onion)
- Quantity: 1 bunch
- Character: thick stem, long dense white part, hollow crisp green leaves
- Growing: roots hand-mounded with soil one by one for a longer white shank
- Season: sweetest in winter on the East Coast, roughly October to March
- Grower: Suzuki Farm, Japanese specialty produce
Best for
- Sukiyaki, hot pot, and nabe
- Grilling and yakitori
- Miso soup and simmered dishes
- Finely chopped raw condiment (yakumi)
- Stir-fries and noodle bowls
How to use and pairings
Rinse well and trim the roots. Cook the white stem to bring out its softness and sweetness, or chop finely and soak briefly in water to mellow raw bitterness for a condiment. Pairs with miso, soy sauce, dashi, and grilled meats.
Flavor profile
Pungent and sharp raw, turning soft, mellow, and notably sweet once cooked, especially in cold weather.
