Varna Leek (Allium ampeloprasum, Porrum group) is a quick-growing leek with a mild, sweet oniony flavor, hardy blue-green leaves, and thick 7 to 10 inch stems that blanch snowy white. A biennial that is a standard for home gardens and market growers, it is well suited to fall and winter harvesting.

How to grow

Start seeds indoors 6 to 8 weeks before the last frost, 1/4 inch deep, with germination in 5 to 12 days. Keep tops trimmed to 2 inches and set out 2 weeks before the last frost; in warm climates, sow in summer for a fall harvest. Grow in full sun in well-drained, limed soil rich in organic matter, and blanch the stems by planting in a trench and filling in as they grow, or by hilling soil up around them. Harvest as needed, mulching heavily in cold climates to hold leeks in the ground.
