Preparation

Thaw in the refrigerator overnight. Wild salmon cooks faster than farmed, so aim for 125 F internal for medium. Pat dry and sear skin side down for 3 to 4 minutes, flip briefly, and rest. Grill over medium heat or roast at 400 F for 7 to 9 minutes. Finish with lemon, fresh dill, or a brown butter and caper sauce. Pairs with Pinot Noir, Sauvignon Blanc, or dry rose.
