Earl Grey Tea-Infused Shortbread Cookies

Ingredients

  • 1 cup butter, softened
  • 2 Earl Grey tea bags, steeped and cooled
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour

  • Zest of 1 lemon
  • 2 tablespoons cold water (from steeped tea)

Instructions

  1. Steep 2 Earl Grey tea bags in 2 tablespoons hot water for 5 minutes, then remove bags and let cool completely.
  2. Cream together softened butter and powdered sugar until light and fluffy.
  3. Mix in the cooled tea liquid and lemon zest until well combined.
  4. In a separate bowl, whisk together flour and salt.
  5. Fold dry ingredients into the wet mixture until a dough forms.
  6. Roll dough between parchment paper to 1/4-inch thickness and cut into desired shapes.
  7. Bake at 325°F for 10-12 minutes until edges are just golden, then cool on a wire rack.
