Prep Time: 10 min  |  Cook Time: 30 min  |  Servings: 4 servings

Ingredients

  • Smoked Slovenian Sausage (4 links, sliced into 1-inch pieces)
  • Sauerkraut (2 cups, drained if packed in liquid)
  • Potatoes (1 lb, cubed into 1/2-inch pieces)
  • Yellow onion (1, sliced)
  • Caraway seeds (1 teaspoon)
  • Low-sodium vegetable broth (1 cup)
  • Olive oil (1 tablespoon)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sausage pieces and cook for 4-5 minutes, stirring occasionally, until browned. Remove and set aside.
  2. In the same skillet, add sliced onion and cook for 3 minutes until beginning to soften. Add cubed potatoes and stir well.
  3. Add caraway seeds and cook for 1 minute until fragrant.
  4. Return the sausage to the skillet along with sauerkraut and vegetable broth. Stir to combine.
  5. Bring to a simmer, then reduce heat to medium. Cover and cook for 20-25 minutes until potatoes are tender.
  6. Season with salt and pepper to taste. Remove lid during final 2 minutes if there is excess liquid you'd like to reduce.
  7. Serve hot in bowls with crusty bread on the side for soaking up the flavorful broth.
