French Garden Bean Seeds grow a gourmet organic filet bean (Phaseolus vulgaris), often called haricot vert, on compact bush plants. The slender, stringless pods reach 6 to 7 inches, stay tender and sweet, and are perfect for fresh eating, steaming, or sauteing. This early, productive variety matures in about 40 to 50 days.

How to grow

Start indoors in short-season climates, or sow directly 1 inch deep once soil reaches at least 65°F, preferably after the last frost. Water lightly at planting, moderately at flowering, and heavily through harvest, avoiding overhead watering. Make small successive plantings every 10 days, and pick regularly to extend production. Fresh beans also freeze well.

Flavor profile

Mild, sweet, and nutty with a crisp, tender texture, excellent eaten fresh or lightly cooked.
