Sorrel (Rumex acetosa) is an organic heirloom perennial herb that delivers lemony, citrus-bright leaves from early spring through fall. How to grow

Sow seeds 1/4 to 1/2 inch deep in full sun once soil reaches 65 to 75°F; germination takes 4 to 10 days. Thin plants to 12 to 18 inches apart. Harvest young, succulent leaves regularly to encourage tender new growth, and as a perennial it returns year after year in zones 4 to 9.

Flavor profile

Bright, tangy, and lemony, earning it the nickname lemonade in a leaf. The citrusy snap lifts salads, soups, and sauces, especially alongside fish or cream.
