How to grow
Start seeds indoors 3 to 4 weeks before the last frost, or sow directly once soil reaches at least 70 degrees, with germination in 6 to 10 days. Plant in full sun in deep, rich soil with plenty of organic matter and water heavily and evenly. Squash are frost sensitive, so use mulch to warm soil and row covers to protect from frost. Harvest when stems shrivel or the skin resists a thumbnail, leaving 2 to 3 inches of stem, then cure in the sun for 10 days and store cool and dry.
Flavor profile
Sweet and nutty with smooth, tender flesh that pairs well with butter and warm spices.
