Boyaca
Boyaca
Single-origin Colombian dark chocolate bar made from beans grown in San Pablo de Borbur, Boyaca, and crafted with freshly pressed Boyaca cocoa butter. Sourced through Impulsa Bacao, the region's new fermentation and drying facility that helped farmers replace coca crops with cacao. Goodnow Farms was the first chocolate maker to use these beans, and worked directly with staff Anyi Torres and William Bonilla to refine the fermentation protocols.
