Jovial Foods at Madeline's
Share
Jovial Foods is an organic food company founded in 2010 by Carla Bartolucci and her husband Rodolfo Viola. The couple started Jovial after their eldest daughter, Giulia, was found to be gluten intolerant, setting out to make wholesome pasta from einkorn, an ancient wheat, and from naturally gluten-free grains. Earlier, in 1995, the pair had helped introduce Bionaturae, one of the first organic Italian food brands in the American market, and Jovial continues to bring that line of Italian pasta, tomatoes, olive oil, vinegar, and fruit spreads to shelves in the United States.
Einkorn is the heart of the company. Jovial grows einkorn in Italy in partnership with small artisanal farms under strict sustainability standards, and it became one of the largest einkorn producers in the process. The grain runs across the lineup as traditional einkorn pasta, 24-hour sourdough einkorn crackers, and small-batch einkorn cookies, along with baking tools such as a stainless steel einkorn kneading tool that founder Carla developed with a relative in Italy, and a linen couche hand-woven on the island of Sardegna.
Alongside einkorn, Jovial offers a full Italian pantry. Its gluten-free pastas are made in Italy from brown rice and cassava using bronze dies and slow drying, and the Bionaturae range includes durum semolina and egg pastas crafted by Tuscan artisans who have made pasta since 1887, Regenerative Organic Certified tomatoes packed in glass on the day they are harvested, extra virgin olive oil pressed within 24 hours of harvest, balsamic vinegar from Modena, and fruit spreads cooked with much less sweetener.

What is Jovial Foods known for?
Jovial Foods is an organic food company founded in 2010 by Carla Bartolucci and Rodolfo Viola, started after their daughter was found to be gluten intolerant. It is best known for einkorn, an ancient wheat that the company grows in Italy and produces at large scale, and for organic gluten-free pasta, alongside the Bionaturae line of organic Italian pantry staples.
Does Jovial Foods make gluten-free pasta?
Yes. Jovial makes organic gluten-free pasta in Italy from brown rice and grain-free cassava, using bronze dies and slow drying so the texture comes close to traditional pasta. Einkorn pasta, by contrast, does contain gluten.
What is einkorn?
Einkorn is an ancient variety of wheat, often described as the original wheat, with less starch than modern wheat. Jovial grows it in Italy with small artisanal farms and uses it in pasta, sourdough crackers, and cookies. It contains gluten, so it is not suitable for people who must avoid gluten entirely.
