Mousehouse Cheesehaus is a family-owned cheese shop in Windsor, Wisconsin, on Lake Circle just off the interstate. Art and Carmen Sobczak bought the little cheese store in 1988, and it has stayed in the family ever since, now run by their son Tony Sobczak and his wife Vicki. Art developed the shop's cheddar recipe, and the store has become a roadside landmark, marked by Igor the Mouse perched above the entrance. It sells well over 100,000 pounds of cheese a year.
The shop hand-selects artisan cheeses and specialty foods from the heart of Wisconsin's dairyland, with cheddar aged in-house in its own cooler. The everyday cheeses run from mild Colby, a Wisconsin original, to longhorn Colby Jack, mild and smoked Gouda, young cheddar, and a top-selling raw-milk Buttermilk Blue. Flavored cheeses include a horseradish and chive Havarti.
