Grain-Free Plantain Flour Pancakes

Ingredients

  • 1 cup Organic Plantain Flour
  • 2 large eggs
  • 3/4 cup almond milk
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • Fresh berries

Instructions

  1. Whisk plantain flour, baking soda, and salt.
  2. Beat eggs, combine with milk, honey, vanilla.
  3. Combine wet and dry ingredients.
  4. Heat buttered skillet over medium heat.
  5. Pour 1/4 cup batter, cook 2-3 minutes until golden.
  6. Flip, cook 2 more minutes.
  7. Serve with fresh berries and maple syrup.
